Aripeka Stone Crab Co.: Stone crab claws, off our own boat.

We’re a family fishery on the Gulf. Captain Matt pulls the traps, the claws are cooked right off the boat, and they’re on ice at our market by the bridge, usually within a day.

The season

Stone crab season runs October 15 to May 1.

Claw guide

Four grades, same pound.

Claws are sold by the pound and graded by size. Bigger claws mean fewer to the pound and more meat for every crack.

About 3.2 oz a claw. Florida grades large at 3 to 5 oz. Each shape is one claw, drawn to its weight.

    The traps go in

    Early October the boat gets loaded and the traps come “off the hill and into the water.” Florida lets traps go in ten days before the season opens.

    Claws only

    The season opens October 15. Only claws 2 7/8 inches or longer come aboard, and the crab goes back in the water. A claw can grow back to about 95 percent of its size over three molts.

    So fresh they move

    The claws come in fresh enough that you’ll catch them moving before they’re cooked. Watch close.

    Cooked right off the boat

    They go straight into our pot at the market, then onto ice. Stone crab claws are sold cooked, so yours are ready to crack.

Four decades on this water.

  1. 1985

    Ron Holliday sets his first traps

    Karri’s dad starts stone crabbing out of Aripeka. The company still carries his start date on every badge.

  2. Early 2000s

    Mermaid Karri

    Karri swims as a mermaid at Weeki Wachee Springs. Customers still call her Mermaid Karri, and she still signs off that way.

  3. Sept 2024

    Helene

    Hurricane Helene pushes about six feet of surge through the market. We lose the refrigerators, the coolers and the ice machine, reorder the next day, and open for the season.

    Captain and mermaid
